Of course he wouldn't be as robotic as he is normally.

I mean he's TECHNICALLY a cyborg, even if most of his human parts are gone by now

He wasn't human to begin with, he was Kaleesh. What I mean is that he'd more flesh and less metal.

Then he's a kaleesh Cyborg? Either way he had organic parts in him

The force travels through organic beings, though there are exceptions such as the Iron Knights which were force-sensitive crystals inside of droid bodies. If Grevious was force sensitive as is, he wouldn't be all that powerful.
